Drizzle the olive oil into a large skillet. Bring to medium heat. Once hot, add the mushrooms, bell pepper, and onion. Saute until soft and slightly caramelized, about 5-7 minutes. Transfer the mushrooms, bell pepper, and onion to a plate. Tent with aluminum foil.
Add the steak to the same skillet. Season with salt and black pepper.
Cook and stir for about 5 minutes, until browned and cooked through.
Layer a generous portion of cooked steak in each hoagie roll. Top the steak with mushrooms, bell pepper, and onion. Followed by two slices of provolone cheese.
Arrange the sandwiches on a baking sheet and place them in the oven. Broil in the oven for 2-3 minutes, until the cheese has melted.
