Beef, Cheese, and Mushroom Pita Pockets with Tzatziki Sauce

Hearty, flavorful comfort food.

Ingredients:

1 tablespoon olive oil
1 brown onion, finely chopped
2 cloves garlic, minced
1 lb ground beef
8 oz mushrooms, diced
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
Salt, to taste
Black pepper, to taste
4 pita pockets, warmed
1 cup shredded mozzarella
Tzatziki sauce, for serving

Directions:

  1. Pour the olive oil into a large skillet. Bring to medium heat.
  2. Saute the onion and garlic for 2-3 minutes, until fragrant and softened.
  3. Add the ground beef, cook for 5-6 minutes, until browned. Drain the skillet.
  4. Stir in the mushrooms, cook for 3-4 minutes, until softened.
  5. Sprinkle in the smoked paprika, cumin, salt, and pepper. Stir to combine. Remove the skillet from the heat and set it aside.
  6. Stuff the pita pockets with the beef and mushroom mixture. Sprinkle on the mozzarella.
  7. Place the pitas in the broiler and cook for 1-2 minutes, until the cheese has melted.
  8. Drizzle the tzatziki sauce over the cheese. Enjoy!
