Pineapple Coconut Cottage Cheese Muffins





Serves 12
Naturally sweet and packed with protein.
Ingredients:
1 1/2 cups flour |
1/4 teaspoon salt |
1/2 teaspoon cinnamon |
1/2 teaspoon baking soda |
1 teaspoon baking powder |
1/2 cup shredded coconut |
1 cup crushed pineapple, drained |
1/4 cup coconut oil, melted |
1 teaspoon vanilla extract |
1/2 cup cottage cheese |
1/3 cup honey |
2 eggs |
Directions:
- Preheat your oven to 350°F. Line a muffin tin with paper liners.
- Whisk together the flour, salt, cinnamon, baking soda, baking powder, and shredded coconut in a mixing bowl. Set aside.
- In a separate bowl, whisk together the pineapple, coconut oil, vanilla extract, cottage cheese, honey, and eggs.
- Gradually fold the flour mixture into the pineapple mixture, stirring until just combined.
- Pour the batter into the muffin cups, filling each about three-quarters full.
- Place the muffin tin in the oven to bake for 18-22 minutes, until a toothpick comes out clean.
- Remove from the oven. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
