Tzatziki Chicken Salad

Serves 4

A delicious Mediterranean twist on a classic.

Ingredients:

1 cup plain Greek yogurt
3 tablespoons fresh lemon juice
1 cup shredded cucumber
1 tablespoon chopped dill
1/2 teaspoon garlic powder
Kosher salt, to taste
Ground black pepper, to taste
4 cups shredded chicken
3 oz feta cheese, crumbled
1/4 cup kalamata olives, chopped
2 tablespoons chopped flat leaf parsley
1/4 cup finely chopped red onion
4 pitas, toasted

Directions:

  1. Create the tzatziki sauce by adding the Greek yogurt, lemon juice, cucumber, dill and garlic powder to a mixing bowl. Season with salt and pepper. Stir together until well combined.
  2. Add the chicken, feta, kalamata olives, parsley, and red onion to the tzatziki sauce.
  3. Fill the pitas with the chicken salad and enjoy.
