Chex Chocolate Butterscotch Clusters

Serves 24

Simple and sweet, rich and irresistible.

Ingredients:

6 cups Rice Chex cereal
1 cup creamy peanut butter
1 cup light corn syrup
1/2 cup sugar
1 cup butterscotch chips
1 cup milk chocolate chips

Directions:

  1. Add the peanut butter, corn syrup, and sugar in a saucepan. Stir together and bring to low heat. Cook and stir until just warm.
  2. Pour the Rice Chex cereal into a large mixing bowl. Pour the peanut butter mixture over cereal and mix to coat.
  3. Lay a sheet of parchment paper on the countertop. Use a cookie scoop to separate into 24 clusters. Drop the clusters onto the parchment paper.
  4. Allow the clusters to cool completely.
  5. In a small saucepan, melt the butterscotch and chocolate chips over low heat, stirring frequently until smooth.
  6. Drizzle the mixture over the clusters. Let sit until the drizzle becomes firm.
