Trim the chicken breasts and slice into thick strips. Set aside.
Add the orange juice, honey, Dijon mustard, yellow mustard, garlic, brown sugar, Cajun seasoning, salt and pepper in a bowl. Whisk until well combined. Add the chicken to bowl and coat evenly. Cover and place in the refrigerator to marinate for 2 hours.
Pour the marinade and chicken into a large skillet and bring to medium-high heat. Cook and stir until the marinade comes to a bubble, then reduce heat to medium-low and let simmer for 25 minutes.
Add the orange slices, red bell pepper and jalapeno to the skillet. Cook and stir for 5 minutes.
Transfer the chicken to serving plates. Spoon the sauce from the skillet over top. Enjoy!

4 boneless, skinless chicken breasts
1/3 cup orange juice
1/3 cup honey
3 tablespoons Dijon mustard
