Chipotle Chicken Fettuccine

Serves 4


1 lb chicken breast, cut into cubes
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon honey
1 tablespoon butter
1 tablespoon canola oil
1/2 cup chopped yellow onion
1 can diced tomatoes, 15 oz.
2 cloves garlic, minced
2 tablespoons chipotle peppers in adobo sauce
1/2 lb fettuccine
1/2 cup corn kernels
1/4 cup grated mozzarella cheese
1/4 cup grated parmesan cheese
1 cup heavy cream


  1. Season the chicken with salt and pepper and drizzle honey over top.
  2. Add the butter and canola oil to a skillet and bring to medium heat.
  3. Once hot, add the chicken to the skillet. Cook until fully golden. Transfer the chicken from skillet to a plate and set aside.
  4. Add the chopped onion to the same skillet and cook for about 7 minutes, until softened. Add the tomatoes, garlic, and chipotle to the skillet. Cover and let simmer for about 10 minutes.
  5. Fill a large pot with water and bring to a boil. Add the fettuccine and cook according to package directions for al dente. Return the fettuccine to the pot. Set aside.
  6. Add the chicken, corn kernels, mozzarella, parmesan, and heavy cream to the skillet. Let simmer for 5 minutes.
  7. Pour the skillet over the fettuccine and toss together.
  8. Spoon the chicken fettuccine onto serving plates. Enjoy!
