Chipotle Chicken Fettuccine

Serves 4
Ingredients:
1 lb chicken breast, cut into cubes |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
1 tablespoon honey |
1 tablespoon butter |
1 tablespoon canola oil |
1/2 cup chopped yellow onion |
1 can diced tomatoes, 15 oz. |
2 cloves garlic, minced |
2 tablespoons chipotle peppers in adobo sauce |
1/2 lb fettuccine |
1/2 cup corn kernels |
1/4 cup grated mozzarella cheese |
1/4 cup grated parmesan cheese |
1 cup heavy cream |
Directions:
- Season the chicken with salt and pepper and drizzle honey over top.
- Add the butter and canola oil to a skillet and bring to medium heat.
- Once hot, add the chicken to the skillet. Cook until fully golden. Transfer the chicken from skillet to a plate and set aside.
- Add the chopped onion to the same skillet and cook for about 7 minutes, until softened. Add the tomatoes, garlic, and chipotle to the skillet. Cover and let simmer for about 10 minutes.
- Fill a large pot with water and bring to a boil. Add the fettuccine and cook according to package directions for al dente. Return the fettuccine to the pot. Set aside.
- Add the chicken, corn kernels, mozzarella, parmesan, and heavy cream to the skillet. Let simmer for 5 minutes.
- Pour the skillet over the fettuccine and toss together.
- Spoon the chicken fettuccine onto serving plates. Enjoy!
