Beef and Rice Lettuce Wraps

Serves 4

Simple ingredients create big flavors.


12 oz ground beef
1/2 cup dry sherry or reduced sodium beef broth
1/4 cup chopped green onions
3 tablespoons chili paste
2 tablespoons chopped fresh ginger
2 tablespoons sugar
1 cup cooked white rice
8 romaine lettuce leaves


  1. In a large nonstick skillet, cook beef over medium heat until browned, about 4 minutes. Drain off fat.
  2. Add sherry, green onions, chili paste, ginger and sugar. Reduce heat to low. Cook, stirring occasionally, until liquid is absorbed, about 5 minutes.
  3. Add rice and stir together. Cook for about 5 minutes, stirring occasionally.
  4. While filling is cooking, drop lettuce leaves into a large pot of boiling water; cook until tender, about 2 minutes. Place lettuce in a bowl of cold water. Drain on paper towels.
  5. Spoon filling evenly into center of each leaf. Fold leaves over filling; roll up tightly. Serve immediately.
