Chipotle Chicken Salad

Serves 6

Savory, satisfying and simple to prepare.

Ingredients:

1 rotisserie-cooked chicken, meat removed
1 white onion, chopped
1 can black beans, rinsed and drained, 16 oz.
1/2 cup fresh cilantro sprigs
1 tablespoon canned chipotles in adobo
1/3 cup olive oil
1/3 cup fresh lime juice
3/4 teaspoon salt
3/4 teaspoon black pepper
2 avocados, cut into cubes
1 cup broken tortilla chips
1 romaine heart, leaves separated

Directions:

  1. Combine chicken with onion and black beans in a large bowl. Set aside.
  2. Puree cilantro, chipotles, olive oil, lime juice, salt and pepper in a blender. Once mixed, pour over chicken mixture and toss to coat. Add chips and gently toss once more.
  3. Serve salad on romaine leaves and top with avocado.
