Brown Sugar and Garlic Pork Loin with Potatoes and Carrots

Serves 4

Simple and oh so savory.

Ingredients:

2 lb pork loin
4 tablespoons brown sugar
4 cloves garlic, minced
2 lb potatoes, scrubbed and chopped
2 lb carrots, peeled and sliced
1/4 cup canola oil, plus 1 tablespoon
Salt, to taste
Ground black pepper, to taste

Directions:

  1. Preheat oven to 375° F.
  2. In a mixing bowl, combine potatoes, carrots and 1/4 cup canola oil. Sprinkle salt and pepper over top and mix together.
  3. Place pork loin a separate bowl and sprinkle with brown sugar and minced garlic. Pour 1 tablespoon canola oil over top and coat pork loin.
  4. Lay pork loin in a large baking dish. Arrange potatoes and carrots around pork loin.
  5. Place baking dish in oven and bake for 50-60 minutes.
  6. Remove baking dish from oven and transfer pork loin to a cutting board. Tent aluminum foil over the top and let rest for 10 minutes. Cover potatoes and carrots in baking dish with foil.
  7. Carve the pork loin and spoon potatoes and carrots onto dishes when ready to serve.
