Salami and Tomato Pasta Salad

This salad is a show stealer!

Ingredients:

1 lb penne pasta
1/2 cup sun-dried tomatoes in oil
1/4 lb salami, sliced
1/2 cup pitted kalamata olives, chopped
1/4 cup sherry vinegar
1 jar quartered marinated artichoke hearts, 12 oz.
1/4 cup fresh basil, chopped
4 oz grated Asiago cheese

Directions:

  1. Pour the sun-dried tomatoes with the oil into a food processor and puree. Set aside.
  2. Fill a pot with water, bring to a boil and cook the pasta according to the package directions. Drain the water and transfer the cooked pasta to a salad bowl.
  3. Add the sliced salami, kalamata olives, sherry vinegar, artichoke hearts, basil and half of the Asiago cheese to the salad bowl. Drizzle the pureed sun-dried tomatoes over top and toss together.
  4. Spoon the pasta salad to serving plates and sprinkle the remaining Asiago cheese over top and enjoy!
