Rich Raspberry Almond Cake

Serves 12

A little sweet, a little tart, all together delicious.

Ingredients:

1 cup flour
1 cup sugar
1/2 cup ground almonds
2 teaspoons baking powder
1/4 teaspoon salt
3 eggs
1/2 cup plain yogurt
1 teaspoon almond extract
1/2 cup canola oil
1/2 cup raspberry preserves
1/2 cup sliced almonds
Whipped cream, for serving
Fresh raspberries, for serving

Directions:

  1. Preheat oven to 350 degrees F. Grease a 9 by 13-inch cake pan with baking spray, set aside.
  2. Whisk together flour, sugar, ground almond, baking powder and salt.
  3. In a separate bowl, beat together the eggs, plain yogurt and almond extract.
  4. Pour the dry ingredients into the wet ingredients bowl and pour the canola oil over the mixture, stir together to make cake batter.
  5. Pour the cake batter into the cake pan. Place in the oven to bake for 25 minutes, until cake is golden. Remove from oven and let cool for 10 minutes.
  6. Spread the raspberry preserves over the top of the cake then sprinkle almond slices over the preserves.
  7. Cut the cake into 12 slices. Add a dollop of whipped cream to each cake slice and finish each slice with a few fresh raspberries.
